
another favorite in our house one skillet
3 pounds of chicken breasts i cube it you can leave it whole, slice, or cube
2 tbsp. olive oil
1-2 tbsp minced garlic to your liking
1 tsp. italian seasoning\1 tsp paprika
1/2 cup chicken broth
2 tbsp. butter
1 1/2 cups heavy whipping cream
3/4 cup parmesan cheese grated
1/3 cup gouda cheese
1 cup cherry tomatoes cut in halves
small chopped fine onion
1-2 cups fresh baby spinach
season chicken with italian seasoning, paprika, salt and pepper. fry in cast iron skillet over medium heat with oil don’t add chicken until your pan is hot. brown chicken put a lid on it and thoroughly cook. after chicken is completely cooked remove from pan. add butter, onion, and garlic cook until fragrant. deglaze pan with broth. make sure to scrape bottom of pan to get all the yummy browned bits. add cream, cheese, spinach and tomatoes. simmer on low to medium heat until sauce starts to thicken. stir to avoid sticking to bottom add chicken back simmer a few more minutes
I serve this on riced cauliflower. garnish with parmesan
